Our approach

Hilton ProChef® Culinary Training - Foundational Level

Within the first 6 months, learners will be well versed in food and kitchen safety, the knife skills needed to ensure safe and consistent food preparation, and have an in-depth understanding of the different cooking methods. Learners will use and apply this knowledge in the latter part of the training program where they’ll learn how to prepare rice, vegetables, dried legumes, potatoes and delicious stocks.

Our approach

Hilton ProChef® Culinary Training – Intermediate Level

The Intermediate program kicks off with a closer look at the fundamentals of nutrition and basic food science principles. Learners will then apply the knowledge gained during the Foundational program with a focus on egg cookery and the most important foundations of sauce and soup production. Wrapping up the Intermediate program is a Learning Path dedicated to pasta, grains, salads and dressings.

These badges, which function as digital credentials, can be shared on social media to showcase learners' accomplishments. ProChef® Registration, Payment and Access Information

Team Members can register themselves to access the training via Hilton University, or Managers can register on their behalf by following the steps below. 

Please note the different instructions for Hilton owned-managed and Hilton franchised properties. 

Owned-managed properties

  1. Click on the ProChef® Foundations or Intermediate course link
  2. Select Scheduled Offering to register
  3. Billing code will pre-populate
  4. Submit registration for Manager approval
  5. Manager will receive an email notification

Manager needs to approve the Team Member’s registration on Hilton University whereafter they will be registered.

Franchised properties

  1. Click on the ProChef® Foundations or Intermediate course link
  2. Select Scheduled Offering to register
  3. Submit credit card information to complete registration

Important

  • Each property should register and pay for each Team Member individually under the Team Member’s Hilton University profile.
  • You will be required to complete payment for the Team Member first before receiving access to the Lobster Ink platform.
  • Facilitator should be identified at the time of registration within Hilton university. See FAQs for details on role of Facilitator.

Access

  • Each property should register and pay for each Team Member individually under the Team Member’s Hilton University profile.
  • Upon approval and payment, Team Members will receive an invitation email and code from Lobster Ink.
  • Team Members need to follow the simple steps set out in the email to gain access to the Lobster Ink training platform. 
  • Once logged in to the platform, Team Members will be taken to the Job Role tags page. This is where they will choose their job role. Content will automatically be assigned to Team Members based on their job role selection. On the Learn page, they will see the courses assigned to them. 
  • Team Members are now able to start their courses.

How much does the program cost?

$134.00 per user per year. This includes:
- Lobster Ink platform access & support
- 12-Month program content subscription
- 2 x 1hr CIA Masterclasses
- A facilitator guide for each program
- Access to Lobster Ink's evolving Culinary training library created in partnership with the CIA. Available programs include Baking & Pastry and Plant-Forward Kitchen.

Should all Team Members start with the Foundational Level?

Yes. This is to ensure that a strong and consistent culinary foundation is present across all Team Members.

How do I ensure that Team Members complete their assigned training in a year?

The Facilitator will receive a facilitator's guide to support them throughout the program. A senior kitchen Team Member can also be selected as a Facilitator. The facilitator's guide features suggested completion timeframes for each learning path, guidelines, checklists and facilitator's tasks to keep Team Members on track.

How can Team Members return to their training?

Bookmark this link for easy access to the ProChef® program. Please note: ProChef® training can only be accessed after Team Members complete program registration and gain platform access.

Where can I sign up for the online CIA Masterclasses?

An invite to the Masterclasses will be shared with registered properties in advance. You will need to confirm attendance, and ensure that all participating Team Members can attend the session.

How can my team get access to Baking & Pastry and Plant-Forward Kitchen?

Baking & Pastry and Plant-Forward Kitchen form part of your ProChef® subscription. To assign the content to subscribed team members, simply create an assignment. You can do this via the CREATE ASSIGNMENT button located on the Home page.

What is the Role of the Facilitator?

- Operates at Property Level and has a direct line to learners
- Responsible for ensuring the learners have the support they need to see success
This includes:
- Creating awareness around the Culinary program
- Ensuring that learners have access to the content and register successfully
- Doing regular check-ins and follow-ups to ensure learners are engaged
- Ensure learners have personal training plans, coach and support the learner throughout their learning journey
- Ensure the practical assessments are conducted
- Ensuring that learners obtain their certification
